Food and Cultural Heritage: some notes

Abstract

Reconstructing the main regulations, these reflections intend to bring food to the constitutional concept of culture and in particular to the field of historical heritage of the Nation. The international community has finally recognized the identity value which certain foods are to the territorial community of reference and now, addressing the food issue in a constitutional perspective, it is possible to look towards wider horizons than those allowed by an essentially economistic theoretical conception.
